Boiled N Grilled Hot Dog

This is a healthy version of the popular hot dog. We have made use of the boiling method, which helps cook the sausage with no oil. The other benefit of this method is that, some of the fat and salt inside the sausage also gets reduced this way. This is a quick recipe to make, which can be used as a snack.



Ingredients
1. Beef sausage - 4 nos
2. Hot dog bun - 4 nos
3. Tomato Sauce/Mustard sauce - as required
4. Lettuce - 3 to 4 leaves chopped
5. Mayonnaise - as required

Method of Preparation

Step 1. Boil the sausage 


Step 2. Without oil put the sausage on a nonstick or any pan on low heat till it gets a slight golden color.


Step 3.{optional} Take the hot dog bun and toast it (if you like you can use butter while toasting)





Step 4. Assemble the hot dog by spreading mayonnaise as required. Keep the hot dog inside the bun and put desired amount of lettuce. Add some amount of tomato sauce or mustard or any sauce of your choice.



Note:

You can avoid or make use of less amount of sauce for a more healthy choice
You can use wheat buns instead of white buns and make it more healthy.

Banana Peanut Butter Sandwich

This is one of the quick breakfast that we can make in our home. It is not only quick and tasty, but also healthy.

Banana Peanut Butter Sandwich


Ingredients
1. Wheat Bread slices - 4 nos
2. Banana - 1 fully ripe
3. Peanut Butter(crunchy/smooth) - 2 to 3 tablespoon
4. Butter (optional)

Method of Preparation
Step 1. Peel the banana and mash it nicely with a fork.

Step 2. If you are serving it for kids you can apply some butter on the bread slices
Step 3. Take a bread slice and spread peanut butter on one side of the bread.

Step 4. Take another bread slice and spread mashed banana mixture on one side of the bread.

Step 5. Assemble both the bread pieces with peanut butter and banana mixture.
Step 6. Toast/grill both sides of the bread slices till it become golden brown.By then the peanut butter and banana mixture will melt into a great consistency.



Step 7. Cut the sandwich into triangle pieces and serve hot with a glass of milk.

Note:

  • For this sandwich try to use the banana which is fully ripe. If the banana is not completely ripe the taste can change.
  • You can use white bread or wheat bread.
  • You can any variety of peanut butter you may like.
  • For kids you can serve this with a glass of milk for breakfast and make it a complete meal.
  • For adults serve with tea or coffee.

Easy Grape Juice

This is a very healthy and delicious juice that everyone will enjoy.And it is easy and quick to make with readily available ingredients.


Ingredients
1. Grapes - 1 lb
2. Sugar/Honey - as required


Method of Preparation

Step 1. Wash the grapes removing it from the stalk and clean it thoroughly.


Step 2. Put the clean grapes in a blender and blend it nicely.
Step 3. Pour the mixture into a sieve and squeeze out all the juice.
Note: Add water if required.

Step 4. Add sugar or honey or any sweetener of your choice according to your taste.

Mango Ice Cream (Without Ice cream Maker)

There may be no one in the world who doesn't like ice cream and what about the combination of mango and ice cream. Delicious and mouth watering right?



The recipe below is a simple one with which anyone can make a mango ice cream..no ice cream maker is required for this.It is a vegan ice cream too.This recipe can be also used for making mango kulfi too .It really works well.


Ingredients
1. Mango - 2 ripe sweet
2. Condensed Milk - 400ml (1 3/5 cup)
3. Heavy Cream -  2 1/4 cup
4. Almonds - 1 tbsp finely chopped(optional)
5. Pistachio nuts -1 tbsp finely chopped(optional)
6. Cardamom powder - a pinch(optional)
7. Fresh mango pieces cubed optional








Method of Preparation
Step 1. Peel the mangoes and cut it into pieces.
Step 2. In a mixer/food processor/Blender blend the mangoes until they become smooth.
Step 3. Add the powdered cardamom powder to the mango puree.(This is optional.Add if you like the taste of Cardamom).

Step 4. Add to it condensed milk and heavy cream and combine well.(don't try to  stir/whisk/beat too much because it can cause the cream to separate)




Step 5. Add finely chopped pistachio nuts and almonds.This is also optional



Step 6. Pour the mixture into an airtight freezer safe container and place in such a way that the container is directly in touch with the freezer.

Step 7. After 2 hours take the mixture out and add some fresh mango pieces into the mixture and combine it.



Step 8. Place the mixture back into the freezer and freeze until firm
Step 9. After 6 to 8 hours you can serve the ice cream.




Tip:
You can use whole milk instead of condensed milk but add approx half to 1 cup of sugar.
You can used canned mangoes for this recipe if you don't have fresh mangoes.
If you are using milk then try to use whole milk itself for the creamy ice cream.

There are lot of variation in making ice creams some people use milk, sugar and condensed milk..some use milk, condensed milk and heavy cream in some quantities...But hope you all try this one and share your comments.

Mango Lassi

This is one of the most famous Indian drinks that you can find in most Indian restaurants. The Mango Lassi is a version of the traditional lassi, which is made from Yogurt mixed with sugar. The Mango Lassi is very good drink of the hot summer days.


Ingredients


1. Mango - 1 ripe sweet
2. Plain Yogurt/Vanilla Yogurt - 2 cups
3. Sugar - 1 to 2 tablespoon
4. Milk - 1/2 cup(optional)
5. Saffron - 2 strands(optional)
6. Ice cubes as required
7. almonds - a pinch(optional)
8. Cardamom powder - a pinch(optional)






Method of Preparation
Step 1. Peel the mangoes and cut it into cubes.
Step 2. Blend ingredients 1 to 6 in a blender and blend until it froths.

Step 3. Garnish with Cardamom powder or chopped almonds.




Tips:

When selecting mangoes for Lassi try to choose very ripe and less fibrous mangoes.
If you are using pulp instead of mango then try to get Alphonso mango pulp.
You can keep the consistency as you like by adding more or less ice cubes
If the yogurt you are using is sour add small amount of milk and additional sugar to correct it.
If you are using vanilla yogurt be careful with sugar as some vanilla yogurt may contain sugar.

Mooru Kachiyathu / Kachiyamooru

Kachiya Moru is an easy preparation with beaten curd .It is a kind of seasoned butter milk. This is one of the item for lunch and dinner which is served with kerala rice.Its combination with some of the other dishes are mouth watering.

Ingredients

1.  Curd - 1/2 litre (beat with water and make to the consistency   you like)
2.  Ginger - 1 teaspoon chopped
3.  Garlic - 1 teaspoon chopped
4.  Pearl Onions/Kunjulli - 3 to 4 sliced OR Onion - 1 Tablespoon     chopped.
5.  Green Chillies - 2 slit 
6.  Turmeric Powder - 1/4 teaspoon
7.  Chilly Powder -  1/4 teaspoon
8.  Oil - 2 teaspoon
9.  Mustard Seeds - 1/4 teaspoon
10. Fenugreek Seeds - 1/4 teaspoon OR pinch of fenugreek powder
11. Curry Leaves - 1 sprig
12. Dried Red chillies - 2 No
13. Salt - to taste
14. Jeera Powder - Optional






Method of Preparation

Step 1. Heat oil in a pan.Splutter Mustard seeds and add dried red chillies and fenugreek seeds.(just allow the fenugreek to be light brown)


Step 2. Add ginger garlic onion curry leaves green chillies and saute till light brown.























Step 3. Reduce the flame and add turmeric powder and chilly powder.If you are using fenugreek powder then add a pinch at this time.

Step 4. Make sure the pan is not very hot and if it is so hot take couple of minutes to lower the heat and slowly add the curd (mixed with enough water) to the pan and mix well .

Step 5. Stir continuously till the mixture is heated and flame starts to come from the spoon.If the mixture is overheated or allowed to boil it will curdle.

Step 6. Let it cool and add salt to taste.

Step 7. Serve with rice.

Note : I have seen some people adding a pinch of jeerakam powder to Kachiya moru that also gives a good taste to moru curry.
