Kerala Style Beans Thoran/stir fry without coconut



Thoran is a Kerala dish which is made with vegetable and coconut. This is usually eaten with Kerala rice. But you can have this with white rice or even chapati or any flat bread. For thoran we chop vegetables as small as we can.

Ingredients

  1. Beans -chopped- 2 cups
  2. Onion -chopped-1/2 a small onion  OR Shallots - 5 to 6
  3. Green chilies -chopped- 3 to 5( or to taste)
  4. Curry leaves- few
  5. Turmeric powder-1/4 tsp
  6. Mustard seeds-1/4 tsp
  7. Garlic - 1 clove (optional)
  8. Coconut / Canola oil/vegetable oil - 2 to 3 tbsp
  9. Salt to taste
  10. Dried Red Chili - 2 nos
Method of Preparation

Step 1. Chop the beans, onions and green chilies
Step 2. Crush the garlic
Step 3. Mix the beans, onions, green chilies, salt, turmeric powder in a mixing bowl well with your hands.







Step 4. Heat some oil in a pan, add some mustard seeds and let it splutter. Add the dried red chilies ,curry leaves and crushed garlic to it, but do not let it burn.
Step 5. Add the prepped beans to the heated oil, bring everything to the center ,make a small dip and add 2 tablespoons of water and cover the dip with the beans.The beans will cook in its steam.

 

 


Step 6. Cover and cook it on low heat, till the beans are done.
Step 7. Season as required with salt

 

Optionally for added taste you can do the following steps:
  - Crush grated coconut(1/4 cup) and a pinch of turmeric simply with your hands
  - Once the beans are done, uncover the lid and add the coconut mix. 
  - Mix it well, close the lid and cook for 3 minutes more.

Step 8. Garnish and serve


Tips: Occasionally just stir the beans while cooking so that it does not stick to the bottom of the pan.

Cook.. Season and Garnish!!
