Mango Ice Cream (Without Ice cream Maker)

There may be no one in the world who doesn't like ice cream and what about the combination of mango and ice cream. Delicious and mouth watering right?



The recipe below is a simple one with which anyone can make a mango ice cream..no ice cream maker is required for this.It is a vegan ice cream too.This recipe can be also used for making mango kulfi too .It really works well.


Ingredients
1. Mango - 2 ripe sweet
2. Condensed Milk - 400ml (1 3/5 cup)
3. Heavy Cream -  2 1/4 cup
4. Almonds - 1 tbsp finely chopped(optional)
5. Pistachio nuts -1 tbsp finely chopped(optional)
6. Cardamom powder - a pinch(optional)
7. Fresh mango pieces cubed optional








Method of Preparation
Step 1. Peel the mangoes and cut it into pieces.
Step 2. In a mixer/food processor/Blender blend the mangoes until they become smooth.
Step 3. Add the powdered cardamom powder to the mango puree.(This is optional.Add if you like the taste of Cardamom).

Step 4. Add to it condensed milk and heavy cream and combine well.(don't try to  stir/whisk/beat too much because it can cause the cream to separate)




Step 5. Add finely chopped pistachio nuts and almonds.This is also optional



Step 6. Pour the mixture into an airtight freezer safe container and place in such a way that the container is directly in touch with the freezer.

Step 7. After 2 hours take the mixture out and add some fresh mango pieces into the mixture and combine it.



Step 8. Place the mixture back into the freezer and freeze until firm
Step 9. After 6 to 8 hours you can serve the ice cream.




Tip:
You can use whole milk instead of condensed milk but add approx half to 1 cup of sugar.
You can used canned mangoes for this recipe if you don't have fresh mangoes.
If you are using milk then try to use whole milk itself for the creamy ice cream.

There are lot of variation in making ice creams some people use milk, sugar and condensed milk..some use milk, condensed milk and heavy cream in some quantities...But hope you all try this one and share your comments.

Mango Lassi

This is one of the most famous Indian drinks that you can find in most Indian restaurants. The Mango Lassi is a version of the traditional lassi, which is made from Yogurt mixed with sugar. The Mango Lassi is very good drink of the hot summer days.


Ingredients


1. Mango - 1 ripe sweet
2. Plain Yogurt/Vanilla Yogurt - 2 cups
3. Sugar - 1 to 2 tablespoon
4. Milk - 1/2 cup(optional)
5. Saffron - 2 strands(optional)
6. Ice cubes as required
7. almonds - a pinch(optional)
8. Cardamom powder - a pinch(optional)






Method of Preparation
Step 1. Peel the mangoes and cut it into cubes.
Step 2. Blend ingredients 1 to 6 in a blender and blend until it froths.

Step 3. Garnish with Cardamom powder or chopped almonds.




Tips:

When selecting mangoes for Lassi try to choose very ripe and less fibrous mangoes.
If you are using pulp instead of mango then try to get Alphonso mango pulp.
You can keep the consistency as you like by adding more or less ice cubes
If the yogurt you are using is sour add small amount of milk and additional sugar to correct it.
If you are using vanilla yogurt be careful with sugar as some vanilla yogurt may contain sugar.
